tex-mex scrambled eggs

You may not believe you can lose weight while on a diet plan which includes tex-mex scrambled eggs but it is feasible. It is pivotal to not eat tex-mex scrambled eggs or other high calorie breakfast every day but in moderation.

This is what I do, I allow myself these kinds of food once per week. I eat a reduced calorie diet 6 days a week, say 1200 to 2000 calories per day, and then 1 day, I eat what I please - within moderation of course.

I have been sticking to this diet for the last 2 weeks and it has helped me to lose 5 kilos. I have not changed my exercise plan or taken any supplements or diet drinks. I have only been conscious of what I eat most days of the week and then eat whatever I want one day per week.

I also believe it makes things easier if you have some support when trying to lose weight and for that I registered with the Biggest Loser club. They have several tools to enable you to monitor your progress and attain your goals.

On my one day off|non diet day|free day per week, I like|prefer|tend|usually like to eat tex-mex food. I never imagined|thought|believed I could lose 5 kilos while eating tex-mex meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. Tex-Mex Scrambled Eggs

Serves 8.

4 teaspoons vegetable oil
1 jalapeno chile, seeded and chopped
6 small corn tortillas, cut into thin strips
1 dozen eggs
1/2 cup chopped onion
2 cups salsa
1/2 cup sour cream
4 chopped green onions

Heat oil in a large nonstick skillet. Cook tortilla strips and chopped onion in oil for about 5 minutes, stirring frequently until tortillas are crisp.

Mix eggs and chile; pour over tortilla mixture. Reduce heat to medium. As mixture begins to set at bottom and sides, gently lift cooked portions with spatula so that the thin, uncooked portions can flow to bottom. Do not stir. Cook 4-5 minutes or until eggs are set but moist.

Top each serving with salsa, sour cream and green onions.

Yields 8 servings.
