tex-mex enchiladas

You may not accept that it is possible to lose weight while on a diet which includes tex-mex enchiladas but it is possible. It is crucial to not eat tex-mex enchiladas or other high calorie enchiladas every day but in moderation.

This is what I do, I allow myself these kinds of food one meal per week. I eat a healthy diet 6 days a week, say 1200 to 2000 calories each day, and then one day, I eat whatever I want – within reason of course.

I have been eating like this for the last 6 weeks and it has enabled me to lose 5 kilos. I have not increased my exercise plan or taken any vitamins or diet food. I have just been aware of what I eat most days of the week and then eat whatever I like one day of the week.

I also find it helps to have professional support when on a weight loss program and for that I joined the Biggest Loser club. They have many tools to help you monitor your progress and achieve your goals.

On my one day off|non diet day|free day per week, I like|prefer|tend|usually like to eat southwestern food. I never imagined|thought|believed I could lose 5 kilos while eating southwestern meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. Tex-Mex Enchiladas

1 tablespoon shortening
1 1/2 tablespoons flour
1 tablespoon red chili powder (or more)
1 1/2 cups warm water
1 tablespoon vegetable oil
6 corn tortillas
1 onion, chopped
2 cups grated Longhorn cheese

Melt shortening in a heavy skillet. Stir in flour and make a roux. Add chili powder and water; stir and cook until the gravy is thick. Keep warm while preparing the tortillas.

Preheat oven to 450 degrees F. Lightly grease an oven-proof casserole dish.

Heat oil in a skillet and lightly fry each tortilla for about 5 seconds on each side. Do not overcook or they will get rubbery. Drain on paper towels.

Dip each tortilla in the gravy, put some of the onion and cheese on the tortilla, roll it up, and place it, seam side down, in a casserole dish. Repeat until all 6 tortillas have been rolled. Pour the chili gravy over the tortillas, top with more cheese, and bake for about 10 minutes.

Serves 2.
