You might not believe it is possible to lose weight while on a diet which includes smoky chicken quesadillas but it is possible. It is fundamental to not eat smoky chicken quesadillas or other high calorie quesadillas every day but in moderation.
For example, I allow myself these kinds of food one day per week. I eat a reduced calorie diet for 6 days of the week, say 1200 to 1600 calories per day, and then on the 7th day, I eat anything – within reason of course.
I have been using this method for the last 2 weeks and it has aided me to lose 5 kilos. I have not changed my exercise routine or taken any pills or diet aids. I have simply been aware of what I eat 6 days per week and then eat whatever I want one day a week.
I also find it is helpful if you have some support when dieting and for that I joined the Biggest Loser club. They have lots of tools to help you monitor your progress and attain your goals.
On my one day off|non diet day|free day per week, I like|prefer|tend|usually like to eat southwestern food. I never imagined|thought|believed I could lose 5 kilos while eating southwestern meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. 3 1/2 cups shredded, roasted chicken
3 canned chipotle chiles, seeded and thinly sliced
1/2 bunch cilantro leaves, chopped (1/4 cup)
3 scallions, trimmed and thinly sliced at an angle
4 tablespoons butter, melted
6 (8-inch) flour tortillas
2 cups (about 8 ounces) grated cheese*
Preheat oven to 350 degrees F.
In a large bowl, combine chicken, chiles, cilantro and scallions.
Brush one side of each tortilla with butter and place, buttered side down, on a baking sheet. Brush tops with butter. Spread equal amounts of grated cheese mix over each tortilla and bake for 5 minutes, until melted.
Spoon equal amounts of chicken mixture over half of each tortilla and fold over to enclose. Return to oven just long enough to heat through, about 5 minutes. Serve hot, whole or cut into wedges. Makes 6 servings.
* A mixture of Mexican cheeses is recommended. An easy-melting cheese such as Mexican (not Spanish) Manchego cheese, Monterey Jack, Muenster or a mild Cheddar is a must. It may be mixed with a drier cheese, such as Anejo or Panela, or some Parmesan, Romano or extra-sharp Cheddar.
