You may not think you can lose weight while on a diet plan which includes puerto rican coquito but it is obtainable. The key is to not eat puerto rican coquito or other high calorie category2 every day but in moderation.
For example, I allow myself rich food one meal per week. I eat a reduced calorie diet for most of the week, say 1500 to 2000 calories per day, and then one day, I eat whatever I like – without going overboard of course.
I have been eating this way for the last month and it has enabled me to lose 5 kilos. I have not increased my exercise regime or taken any pills or diet aids. I have just been careful of what I eat most days of the week and then eat whatever I like one day a week.
On my one non diet day per week, I tend to eat caribbean food. I never imagined I could lose 5 kilos while eating caribbean meals but am very happy to see it does work. If you would like to try some caribbean food, I suggest you make puerto rican coquito which is one of my most admired caribbean recipes.
2 cups coconut milk*
3/4 to 1 cup granulated sugar
1/8 teaspoon salt
1/4 teaspoon ground cinnamon
2 egg yolks
2 cups white Puerto Rican Rum
* Buy frozen milk in supermarket, or crack and pry the meat from a fresh coconut, add half the amount of warm water as coconut meat, place in food processor, process for 2 to 3 minutes. Let it cool and then squeeze half the mixture through cheesecloth, then second half. If you do not get 2 cups, add water to what you have to make the required coconut milk.
Put the sugar, salt, cinnamon, egg yolks and 1/2 cup of the coconut milk in a blender. Blend until sugar is dissolved. Add the rest of the coconut milk and blend again. Pour the entire mixture into an enamel pot and bring JUST to a low boil. Stirring, remove from heat and let cool.
Add rum and stir thoroughly to completely blend the flavors. Bottle and chill well before serving in very small liquor glasses with a dusting of cinnamon.
This should yield about 4 cups.
You can adjust the recipe to make it a little healthier or with not so many calories as this can help you to lose 5 kilos easily. It was successful for me and could aid you to lose weight as well.
