Pineapple Salad

You might not think it is possible to lose weight while on a diet which includes Pineapple Salad but it is feasible. It is fundamental to not eat Pineapple Salad or other high calorie vegetables & salads every day but in moderation.

As an example, I allow myself high calorie food once per week. I eat a healthy diet for 6 days of the week, say 1400 to 1600 calories each day, and then 1 day, I eat what I please – within moderation of course.

I have been using this method for the last few weeks and it has aided me to lose 5 kilos. I have not increased my exercise routine or taken any vitamins or diet aids. I have just been aware of what I eat 6 days per week and then eat whatever I like one day a week.

I also think it makes things easier if you have professional support when on a weight loss program and for that I registered with the Biggest Loser club. They have several tools to show you how to monitor your progress and reach your goals.

On my one day off|non diet day|free day per week, I like|prefer|tend|usually like to eat Thai food. I never imagined|thought|believed I could lose 5 kilos while eating Thai meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. Pineapple Salad

This salad is drenched with the sweet-salty flavor for which Thailand is famous.

1/3 cup olive oil or vegetable oil
2 tablespoons lemon juice
1 tablespoon soy sauce
1 to 2 teaspoons packed brown sugar
1 small pineapple
1 tart red apple, diced
3 scallions (with tops), sliced
1 small bunch romaine, shredded

Shake oil, lemon juice, soy sauce and brown sugar in tightly covered jar. Cut top off pineapple; cut pineapple into quarters. Cut fruit from rind; remove core and any eyes. Slice each quarter lengthwise; cut crosswise into chunks. Toss pineapple chunks, apple and scallions with dressing. Place romaine in shallow bowl; mound fruit mixture in center.

Yields 6 servings.
