You might not think you could lose weight while on a diet which includes pineapple gazpacho but it is achievable. The key is to not eat pineapple gazpacho or other high calorie soups every day but in moderation.
As an example, I allow myself moderately high calorie food once per week. I eat a healthy diet for 6 days of the week, say 1400 to 2000 calories each day, and then on the last day, I eat whatever I like – without going overboard of course.
I have been using this method for the last 6 weeks and it has aided me to lose 5 kilos. I have not changed my exercise regime or taken any pills or diet aids. I have simply been conscious of what I eat 6 days per week and then eat whatever I like one day per week.
I also feel it makes things easier if you have a little support when trying to lose weight and for that I registered with the Biggest Loser club. They have many tools to enable you to monitor your progress and reach your goals.
On my one day off|non diet day|free day per week, I like|prefer|tend|usually like to eat southwestern food. I never imagined|thought|believed I could lose 5 kilos while eating southwestern meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. 1/2 cup yellow bell peppers, chopped
1/4 cup pineapple juice
1 (1 1/2 pound) fresh pineapple, chopped
1/4 cup red onion, chopped
1/4 cup cucumber, peeled, seeded and chopped
2 teaspoons rice wine vinegar
1/4 teaspoon salt
1/2 teaspoon hot red pepper sauce
1/8 teaspoon white pepper
1 tablespoon brown sugar
Garnish
1/4 cup red bell pepper, finely chopped
1/4 cup green bell pepper, finely chopped
1/4 cup cucumber, finely seeded, chopped
1 tablespoon cilantro, chopped
Place yellow bell peppers, pineapple juice, pineapple, red onion, cucumber, rice wine vinegar, salt, pepper sauce, white pepper and brown sugar in a food processor or blender and pur?e. Transfer to a bowl and refrigerate until ready to serve (can be prepared one day in advance).
To serve, ladle 6 ounces into a chilled soup cup and sprinkle with red and green bell peppers, cucumber and cilantro.
Makes 4 servings (6 ounces each).
Approximate values per serving: 72 calories, 1g fat, 0 cholesterol, 1g protein, 18 g carbohydrates, 2 g fiber, 137 mg sodium, 6 percent calories from fat
