You might not believe it is possible to lose weight while on a eating plan which includes pinakbet but it can happen. The key is to not eat pinakbet or other high calorie beef/pork/lamb/veal every day but in moderation.

For instance, I allow myself moderately high calorie food one meal per week. I eat a healthy diet for 6 days of the week, say 1500 to 2000 calories each day, and then 1 day, I eat whatever I want – within moderation of course.

I have been eating this way for the last 4 weeks and it has helped me to lose 5 kilos. I have not changed my exercise routine or taken any vitamins or diet food. I have simply been conscious of what I eat most days of the week and then eat whatever I want one day of the week.

I also think it is helpful if you have some support when trying to lose weight and for that I registered with the Biggest Loser club. They have several tools to help you monitor your progress and attain your goals.

I never imagined|thought|believed I could lose 5 kilos while eating philippine meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. Pinakbet

1 1/2 cups water
1/2 pound pork
3 cloves garlic
1 teaspoon ginger
1/4 cup bagoong
4 eggplants
1/3 cup tomatoes
2 pieces ampalaya or amargoso
1/2 teaspoon MSG
Salt

Slice the pork into strips. Mince the garlic, chop the ginger, and tomatoes. Quarter the eggplant and ampalaya or amargoso.

Bring the water to a boil in a medium saucepan. Add the pork, tomatoes, garlic, ginger and bagoong. Simmer until the pork is tender.

Add the ampalaya or amargoso and eggplant and simmer until done. Add MSG and salt to taste.

Makes 4 servings.
