paddy’s day cupcakes

You might not believe it is possible to lose weight while on a diet plan which includes paddy’s day cupcakes but it is possible. The key is to not eat paddy’s day cupcakes or other high calorie desserts every day but in moderation.

For instance, I allow myself high calorie food one day per week. I eat a reduced calorie diet 6 days a week, say 1500 to 1800 calories each day, and then one day, I eat whatever I like - without going overboard of course.

I have been using this method for the last few weeks and it has aided me to lose 5 kilos. I have not accelerated my exercise habits or taken any pills or diet aids. I have just been careful of what I eat most days of the week and then eat whatever I like one day a week.

I also think it makes things easier if you have a little support when dieting and for that I joined the Biggest Loser club. They have many tools to show you how to monitor your progress and reach your goals.

On my one day off|non diet day|free day per week, I like|prefer|tend|usually like to eat irish food. I never imagined|thought|believed I could lose 5 kilos while eating irish meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. Paddy’s Day Cupcakes

1 3/4 cups flour
1 small box instant pistachio pudding mix
3/4 cup miniature chocolate chips
2/3 cup granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2 beaten eggs
1 1/4 cups milk
1/2 cup vegetable oil
1 teaspoon vanilla or 1/4 teaspoon almond extract
1/2 can (1 cup) cream cheese frosting
Green colored sugar
1/2 cup green candy-coated milk chocolate pieces

In a large bowl, stir together flour, pudding mix, chocolate pieces, sugar, baking powder and salt.

In a small bowl, combine the eggs, milk, oil and vanilla or almond extract. Stir into flour mixture just until combined. Fill greased or paper-line muffin tins about 2/3 full. Bake at 375 degrees F for 18 to 20 minutes or until golden brown. Cool on a wire rack.

Frost and sprinkle with green sugar and/or other candy pieces, such as green M&Ms.

Makes 18.
