nopalitos (little cacti)

September 12th, 2008

You might not think it is possible to lose weight while on a eating plan which includes nopalitos (little cacti) but it is possible. It is fundamental to not eat nopalitos (little cacti) or other high calorie vegetable every day but in moderation.

For instance, I allow myself rich food once per week. I eat a reduced calorie diet 6 days a week, say 1200 to 2000 calories a day, and then 1 day, I eat whatever I like – within reason of course.

I have been using this method for the last few weeks and it has helped me to lose 5 kilos. I have not accelerated my exercise habits or taken any pills or diet drinks. I have just been careful of what I eat on most days and then eat whatever I feel like one day a week.

I also find it helps to have a little support when on a weight loss program and for that I joined the Biggest Loser club. They have several tools to help you monitor your progress and attain your goals.

Nopalitos (Little Cacti)

3/4 pound nopal cactus pads
2 tablespoons olive oil
1 jalape?o chile, seeded and minced
1 medium onion, chopped
3 tomatoes, chopped
1/2 teaspoon salt, or to taste
1 tablespoon vinegar

Remove thorns from the cactus paddles and cut them into strips about 2 inches long by 1/4 inch wide. Boil the cactus paddles until they are soft and the texture is much like that of cooked bell pepper.

Heat a saucepan over moderate heat. Add olive oil, jalape?o chile and onion. Cook until the onion is soft but not browned. Turn the heat to low. Add tomatoes, cooked cactus paddles and salt. Simmer, uncovered, for 30 minutes, adding the vinegar for the last 5 minutes of cooking.

Serves 4.
