You might not accept that it is possible to lose weight while on a diet which includes nopalito salad (prickly pear cactus salad) but it is feasible. It is pivotal to not eat nopalito salad (prickly pear cactus salad) or other high calorie vegetables & salads every day but in moderation.

This is what I do, I allow myself moderately high calorie food one meal per week. I eat a healthy diet for 6 days of the week, say 1500 to 1600 calories per day, and then on the 7th day, I eat whatever I like – within reason of course.

I have been using this method for the last 2 weeks and it has enabled me to lose 5 kilos. I have not increased my exercise habits or taken any supplements or diet aids. I have just been conscious of what I eat most days of the week and then eat whatever I want one day of the week.

Nopalito Salad (Prickly Pear Cactus Salad)

Dressing
1/2 teaspoon salt, or to taste
1/4 teaspoon pepper
1/2 teaspoon dry mustard
1/4 cup vinegar
1/2 cup oil
1/4 teaspoon Mexican oregano
1/2 cup sour cream

Salad
1 small yellow onion, halved and cut into strips
1 1/2 cup canned nopal cactus, chopped
1 (3 ounce) jar pimentos, rinsed, or 2 bell peppers, diced
2 cups jicama, chopped

Whisk or blend dressing ingredients vigorously to combine. Adjust seasonings to taste. Place the onions in a colander. Pour about 1 quart boiling water over them. This removes the raw taste and leaves the onions crisp. Rinse immediately with cold water and let stand. Toss together the onions, cactus, pimentos or red bell peppers and jicama. Toss the dressing and salad together just prior to serving.
