You may not accept that you can lose weight while on a eating plan which includes new orleans ham gumbo but it is possible. The key is to not eat new orleans ham gumbo or other high calorie soups, gumbos, chili every day but in moderation.

For instance, I allow myself high calorie food once per week. I eat a healthy diet for 6 days of the week, say 1500 to 2000 calories each day, and then one day, I eat what I please – without going overboard of course.

I have been using this method for the last few weeks and it has enabled me to lose 5 kilos. I have not increased my exercise plan or taken any vitamins or diet drinks. I have only been careful of what I eat 6 days per week and then eat whatever I want one day per week.

I also think it helps to have professional support when trying to lose weight and for that I signed up with the Biggest Loser club. They have lots of tools to enable you to monitor your progress and achieve your goals.

On my one day off|non diet day|free day per week, I like|prefer|tend|usually like to eat cajun food. I never imagined|thought|believed I could lose 5 kilos while eating cajun meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. New Orleans Ham Gumbo

9 tablespoons shortening or oil
7 tablespoons flour
1/2 cup chopped onion
1/2 cup diced bell pepper
1 (16 ounce) can tomatoes, pureed in blender
1 (15 ounce) can Spanish style tomato sauce
1/2 cup water
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
1/2 teaspoon celery salt
1 tablespoon brown sugar
1/4 teaspoon hot red pepper sauce, optional
1 1/2 cups sliced fresh okra
2 cups cubed cooked ham, 1/2-inch cubes

Melt shortening in large 5-quart Dutch oven over medium high heat.

Add flour; cook and brown flour, stirring constantly, until it is deep, dark brown.

Add chopped onion and diced bell pepper. Flour will stop browning when onion is added. Cook until onion turns clear, stirring occasionally.

Add tomato sauce, purred tomatoes and water; stir until smooth and boiling. Cook 3 minutes or until thickened.

Add all spices and seasoning, stirring well.

Add thin-sliced okra and cook 15 minutes, stirring occasionally.

Add cubed ham and continue cooking 10 minutes.

Gumbo may be prepared in a day in advance and stored in refrigerator.

Serve over scoops of fluffy white rice.

Yields 6 to 8 servings.

NOTE: Cleaned shrimp may be substituted for all or half of ham.
