You might not think you could lose weight while on a eating plan which includes mexican stuffed peppers but it is achievable. It is pivotal to not eat mexican stuffed peppers or other high calorie beef/pork/lamb/veal every day but in moderation.
As an example, I allow myself rich food once per week. I eat a healthy diet for most of the week, say 1200 to 1800 calories each day, and then on the 7th day, I eat what I please – without going crazy of course.
I have been sticking to this diet for the last 2 weeks and it has enabled me to lose 5 kilos. I have not accelerated my exercise regime or taken any supplements or diet drinks. I have only been aware of what I eat on most days and then eat whatever I want one day of the week.
On my one free day per week, I usually like to eat mexican food. I never thought I could lose 5 kilos while eating mexican meals but am very pleased to see it is possible. If you want to try some mexican food, I propose you make mexican stuffed peppers which is one of my favourite mexican recipes.

4 Anaheim chiles
1 pound ground beef
1 package taco seasoning mix
1 package shredded cheese
1 can enchilada sauce
1 medium to large baking dish
Preheat oven to 350 degrees F.
Brown ground beef.
While beef is browning, cut the top off the Anaheim peppers. Slice down one side of each pepper. De-vein and de-seed chiles to flavor (The more you leave in, the hotter it is!)
Add taco seasoning to beef when properly brown and prepare based on directions on taco seasoning package.
Place pepper, sliced side up, in a medium to large pan for baking. Stuff each pepper with meat and cheese. Cover all with enchilada sauce. Cover (or don’t – depends on who is cooking) dish and bake for 15 to 20 minutes.
Remove from oven and serve.
You can vary the recipe to make it quite a bit healthier or with not so many calories as this can aid you to lose 5 kilos quickly. It worked for me and could assist you to lose weight as well.
