matzo meal pancakes

You may not think it is possible to lose weight while on a diet which includes matzo meal pancakes but it is feasible. It is crucial to not eat matzo meal pancakes or other high calorie bread, matzo, dumplings every day but in moderation.

As an example, I allow myself rich food once per week. I eat a reduced calorie diet 6 days a week, say 1500 to 1600 calories per day, and then on the last day, I eat whatever I want – within moderation of course.

I have been eating like this for the last few weeks and it has enabled me to lose 5 kilos. I have not changed my exercise habits or taken any pills or diet aids. I have simply been aware of what I eat 6 days per week and then eat whatever I like one day of the week.

I also feel it makes things easier if you have a little support when dieting and for that I signed up with the Biggest Loser club. They have lots of tools to help you monitor your progress and attain your goals.

Matzo Meal Pancakes

3 eggs
1/2 cup cold water
1/4 teaspoon salt
1 cup matzo meal
1 medium onion, grated
Melted shortening or oil

Beat eggs and combine with cold water, salt, two-thirds of the grated onion and enough matzo meal to make a stiff batter that will drop from the spoon.

Heat shortening or oil in a heavy skillet and add remaining piece of onion for flavor. Drop batter from spoon to form round cakes and fry until brown before turning over to brown on underside. Lift out one at a time and drain thoroughly before serving with applesauce mixed with dried fruit compote, cranberry sauce or just plain with meat or cheese dishes.

Yields 12 to 14 pancakes.
