You may not think you can lose weight while on a eating plan which includes lime meringue pie but it is obtainable. The key is to not eat lime meringue pie or other high calorie desserts every day but in moderation.
As an example, I allow myself these kinds of food once per week. I eat a low calorie diet for most of the week, say 1500 to 2000 calories a day, and then one day, I eat anything – within reason of course.
I have been eating like this for the last few weeks and it has enabled me to lose 5 kilos. I have not changed my exercise routine or taken any supplements or diet aids. I have only been aware of what I eat most days of the week and then eat whatever I like one day per week.
On my one non diet day per week, I prefer to eat caribbean food. I never believed I could lose 5 kilos while eating caribbean meals but am very happy to see it is possible. If you feel like trying some caribbean food, I propose you make lime meringue pie which is one of my best loved caribbean recipes.
1 (9-inch) pie crust, your favorite recipe or packaged
Filling
3/4 cup cornstarch
4 egg yolks (reserve the white for the meringue)
2 1/2 cups water
1/4 cup fresh lime juice
2 cups granulated sugar
1 teaspoon salt
4 tablespoons butter
Meringue
4 egg whites
1/4 teaspoon baking powder
1 cup granulated sugar
1 tablespoon fresh lime juice
Bake the pie crust in a preheated 350 degree F oven for about 30 minutes, or according to the package directions, until light golden brown. Cool and set aside.
Combine the cornstarch and 1 cup of the water in a saucepan and whisk until combined. Add the remaining water and filling ingredients and whisk to combine. Cook over low heat, stirring constantly with a wooden spoon, until thick and boiling. Pour into the baked pie shell.
Beat the egg whites until stiff. Add the remaining Meringue ingredients, beating until thoroughly combined. Top the pie filling with the egg white mixture, spreading it just to the edge of the pie crust. Bake in a preheated 350 degrees F oven for about 15 minutes, until light golden brown. Overcooking will cause the meringue to crack when serving. Cool and refrigerate before serving.
Makes one 9-inch pie to serve 6 to 8.
You can vary the recipe to make it quite a bit healthier or with fewer calories as this can help you to lose 5 kilos quickly. It worked for me and could help you to lose weight too.
