italian cream pie

You might not think you can lose weight while on a diet which includes italian cream pie but it is possible. It is fundamental to not eat italian cream pie or other high calorie desserts every day but in moderation.

For instance, I allow myself these kinds of food once per week. I eat a low calorie diet for most of the week, say 1400 to 1600 calories a day, and then on the last day, I eat whatever I want – within moderation of course.

I have been eating this way for the last 6 weeks and it has enabled me to lose 5 kilos. I have not increased my exercise routine or taken any vitamins or diet aids. I have only been conscious of what I eat most days of the week and then eat whatever I feel like one day of the week.

I also feel it helps to have a little support when on a weight loss program and for that I joined the Biggest Loser club. They have numerous tools to enable you to monitor your progress and reach your goals.

On my one day off|non diet day|free day per week, I like|prefer|tend|usually like to eat italian food. I never imagined|thought|believed I could lose 5 kilos while eating italian meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. Italian Cream Cake (T&T)

This is a family hand-me-down, and quite T&T. It has quite a bit of coconut in it, and many people who don’t otherwise like coconut (myself included) love this cake.

2 cups granulated sugar
1/2 cup (1 stick) butter or margarine
5 egg yolks
1 teaspoon vanilla extract
1 teaspoon baking soda
2 cups flour
1 cup buttermilk
1 cup coconut
1 cup pecans
5 egg whites

Cream sugar and butter well. Add egg yolks, one at a time. Mix vanilla extract and baking soda in small bowl, and mix flour and buttermilk in separate small bowl. Begin with vanilla mixture and add flour mixture alternately with vanilla mixture until all blended. Add coconut and pecans. Beat egg whites and fold into batter. Pour into 3 (9-inch) rounds or one sheet cake pan and bake at 350 degrees F for 20 minutes.

Icing
8 ounces cream cheese, softened
1/2 cup (1 stick) butter or margarine
1 cup chopped pecans
1 cup coconut
1 box (4 cups) powdered sugar

Mix together ingredients in the order listed.
