You might not accept that you could lose weight while on a diet plan which includes fig fritters but it is possible. It is crucial to not eat fig fritters or other high calorie deserts every day but in moderation.

This is what I do, I allow myself rich food one meal per week. I eat a healthy diet for 6 days of the week, say 1500 to 1800 calories a day, and then on the last day, I eat whatever I want – without going crazy of course.

I have been sticking to this diet for the last 4 weeks and it has enabled me to lose 5 kilos. I have not increased my exercise regime or taken any pills or diet food. I have simply been careful of what I eat 6 days per week and then eat whatever I like one day a week.

I also think it is helpful if you have professional support when trying to lose weight and for that I registered with the Biggest Loser club. They have numerous tools to enable you to monitor your progress and achieve your goals.

Bunuelos de Higos (Fig Fritters)

Yield: 24

24 firm ripe figs
2 eggs, separated
5/8 cup milk
1 tablespoon oil
1 pinch salt
Grated lemon rind
4 1/2 ounces flour
1 tablespoon granulated sugar
Oil for frying

Wash and dry the figs. If they are large, halve or quarter them.

In a bowl beat the egg yolks with the milk, oil, salt and lemon rind. Stir in the flour and sugar and combine well. Refrigerate the batter for 2 hours.

Beat the egg whites until stiff and fold them into the batter. Dip the figs into the batter and fry them in deep, hot oil until golden brown. Drain briefly on paper or paper towels and sprinkle with sugar.

NOTE: Apricots, bananas and other fruit can be prepared in the same way.
