You might not think you can lose weight while on a diet plan which includes eggplant salad but it is possible. The key is to not eat eggplant salad or other high calorie vegetables & salads every day but in moderation.
As an example, I allow myself rich food one day per week. I eat a reduced calorie diet for 6 days of the week, say 1200 to 1600 calories each day, and then 1 day, I eat whatever I like – within moderation of course.
I have been eating this way for the last 4 weeks and it has helped me to lose 5 kilos. I have not accelerated my exercise routine or taken any supplements or diet aids. I have simply been aware of what I eat on most days and then eat whatever I like one day per week.
On my one non diet day per week, I usually like to eat italian food. I never believed I could lose 5 kilos while eating italian meals but am very pleased to see it can work. If you would like to try some italian food, I propose you make eggplant salad which is one of my most admired italian recipes.
EGGPLANT SALAD (Caponata)
1 (1 1/2 pound) eggplant
1 small onion, chopped
2 tablespoons white wine vinegar
1 clove garlic, chopped
1/2 teaspoon dried oregano leaves
1/2 teaspoon salt
1/4 teaspoon pepper
1 medium tomato, chopped
1/4 cup minced parsley
1/4 cup olive oil or vegetable oil
Cut eggplant into 3/4-inch cubes. Heat small amount salted water to boiling. Add eggplant. Heat to boiling; reduce heat. Cover and cook until tender, about 10 minutes; drain.
Place eggplant and onion in nonreactive bowl. Mix vinegar, garlic, oregano, salt and pepper; pour over eggplant and onion. Toss. Stir in tomato and parsley. Cover and refrigerate at least 6 hours.
Just before serving, stir in oil.
You can change the recipe to make it a little healthier or with not so many calories as this can aid you to lose 5 kilos quickly. It did work for me and could help you to lose weight too.
