country pan-fried chicken

You might not accept that you could lose weight while on a diet which includes country pan-fried chicken but it is achievable. It is crucial to not eat country pan-fried chicken or other high calorie poultry every day but in moderation.

This is what I do, I allow myself high calorie food once per week. I eat a reduced calorie diet 6 days a week, say 1400 to 2000 calories per day, and then on the last day, I eat anything - without going overboard of course.

I have been eating this way for the last few weeks and it has helped me to lose 5 kilos. I have not increased my exercise routine or taken any vitamins or diet food. I have just been careful of what I eat on most days and then eat whatever I want one day a week.

I also believe it is helpful if you have some support when on a weight loss program and for that I signed up with the Biggest Loser club. They have several tools to enable you to monitor your progress and achieve your goals.

On my one day off|non diet day|free day per week, I like|prefer|tend|usually like to eat southwestern food. I never imagined|thought|believed I could lose 5 kilos while eating southwestern meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. Country Pan-Fried Chicken

3 pounds chicken breasts and legs
1 egg
2/3 cup buttermilk
2 cups flour
Salt, to taste
1/2 teaspoon cayenne pepper
1 teaspoon black pepper
1 cup lard
1 cup solid white vegetable shortening

Let chicken warm to room temperature. Wipe with a damp cloth. In a wide bowl, beat egg with buttermilk. Place flour, salt and peppers in a brown paper bag. In a large skillet (preferably cast iron) heat lard and shortening. Dip each piece of chicken into the buttermilk-egg mixture and place in a brown paper bag. Close top of bag and shake until piece is well coated. Remove, and repeat for each piece.

When shortening is hot (375 degrees F on a deep-fat thermometer), ease chicken into pan and cook over high heat, turning so both sides cook evenly. Do not crowd more than a few pieces of chicken into pan at one time. When chicken is light gold on both sides, turn down heat to low and partially cover skillet. Cook 15 minutes, turning chicken once.

Remove chicken and drain on brown paper bags.

Serve warm or cold.
