corn with okra and tomatoes

You may not believe you could lose weight while on a diet plan which includes corn with okra and tomatoes but it is obtainable. The key is to not eat corn with okra and tomatoes or other high calorie vegetables every day but in moderation.

As an example, I allow myself moderately high calorie food one meal per week. I eat a calorie controlled diet 6 days a week, say 1400 to 1600 calories each day, and then one day, I eat whatever I want – without going crazy of course.

I have been eating like this for the last 2 weeks and it has helped me to lose 5 kilos. I have not increased my exercise habits or taken any pills or diet drinks. I have just been conscious of what I eat on most days and then eat whatever I feel like one day per week.

I also believe it is helpful if you have some support when trying to lose weight and for that I registered with the Biggest Loser club. They have many tools to help you monitor your progress and attain your goals.

On my one day off|non diet day|free day per week, I like|prefer|tend|usually like to eat caribbean food. I never imagined|thought|believed I could lose 5 kilos while eating caribbean meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. Corn with Okra and Tomatoes

6 ears corn*
2 cups cut-up okra**
1/3 cup butter or margarine
2 tablespoons butter or margarine
3 medium tomatoes, chopped
1 tablespoon granulated sugar
1 1/2 teaspoons salt
1/4 teaspoon pepper

Cut corn from cobs (about 4 cups). Cook and stir okra in 1/3 cup butter in 12-inch skillet over medium heat until tender, about 7 minutes. Add corn and 2 tablespoons butter. Cook uncovered until tender, 10 to 12 minutes.  Stir in remaining ingredients. Cook uncovered until  tomatoes are hot, about 3 minutes.

Yields 8 servings.

* 2 (16 ounce) cans whole kernel corn, drained, can be substituted.

** 1 (10 ounce) package frozen okra can be substituted. Rinse under running cold water to separate; cut crosswise into slices. Cook as directed above.
