You might not think you can lose weight while on a diet which includes chicken chilaquiles but it is possible. The key is to not eat chicken chilaquiles or other high calorie poultry every day but in moderation.

For example, I allow myself rich food one day per week. I eat a healthy diet for most of the week, say 1400 to 1600 calories per day, and then on the 7th day, I eat what I please - without going crazy of course.

I have been eating like this for the last month and it has enabled me to lose 5 kilos. I have not increased my exercise plan or taken any vitamins or diet food. I have just been conscious of what I eat 6 days per week and then eat whatever I want one day of the week.

I also think it helps to have a little support when on a weight loss program and for that I signed up with the Biggest Loser club. They have many tools to show you how to monitor your progress and attain your goals.

On my one day off|non diet day|free day per week, I like|prefer|tend|usually like to eat southwestern food. I never imagined|thought|believed I could lose 5 kilos while eating southwestern meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. Chicken Chilaquiles

Servings: 4

4 skinless, boned chicken breast halves
1/2 teaspoon cumin
Salt and pepper, to taste
8 ounces lightly salted tortilla chips
28 ounces green enchilada sauce
8 ounces Monterey jack cheese, shredded
1/2 cup cilantro, chopped
4 green onions, chopped
8 tablespoons light or regular sour cream
1/2 cup salsa fresca (fresh or store-bought)

Sprinkle breasts with cumin, salt and pepper. Broil until just done. Slice or shred chicken.

Evenly cover four microwave-safe dinner plates with tortilla chips. Sprinkle with chicken. Pour enchilada sauce over the chicken and then microwave each plate for 1 to 1 1/2 minutes. Top with cheese and microwave each plate for 45 to 60 seconds or until cheese melts in the center of plate.

Meanwhile, chop and combine cilantro and green onions. Sprinkle a 1/4 cup mixture over each of the heated plates. Put a dollop of sour cream in the center of each plate and surround with salsa fresca.
