You may not accept that you can lose weight while on a eating plan which includes cheese and tortilla pie but it is achievable. It is pivotal to not eat cheese and tortilla pie or other high calorie pie every day but in moderation.

For instance, I allow myself these kinds of food once per week. I eat a reduced calorie diet 6 days a week, say 1200 to 1800 calories per day, and then on the last day, I eat whatever I want – within moderation of course.

I have been eating like this for the last 6 weeks and it has helped me to lose 5 kilos. I have not accelerated my exercise plan or taken any vitamins or diet aids. I have just been conscious of what I eat on most days and then eat whatever I want one day per week.

I also think it helps to have some support when on a weight loss program and for that I signed up with the Biggest Loser club. They have many tools to enable you to monitor your progress and attain your goals.

Cheese and Tortilla Pie

1/2 pound Monterey jack cheese, grated
1/2 pound Cheddar cheese, grated
1 can sliced black olives
3 or 4 chopped green onions
8 (4-inch) corn tortillas
1 1/2 cup cottage cheese
1/2 cup sour cream
1 (8 ounce) can tomato sauce
1 (8 ounce) can green chile salsa

Preheat oven to 350 degrees F. Grease a 3-quart casserole.

Combine the grated cheeses, olives, green onions (reserve 1/4 cup of the cheese for tipping). Combine cottage cheese and sour cream.

In prepared casserole start layering tortillas, cottage cheese mixture and cheeses. Repeat.

Combine tomato sauce and green chile salsa and pour over top of casserole. Top with remaining grated cheese. Bake covered for 40 minutes.
