You may not think you could lose weight while on a diet which includes carne seca (dried beef) but it is obtainable. It is pivotal to not eat carne seca (dried beef) or other high calorie beef/pork/lamb/veal every day but in moderation.

For example, I allow myself high calorie food one meal per week. I eat a healthy diet for most of the week, say 1200 to 1600 calories each day, and then on the last day, I eat whatever I want – within reason of course.

I have been eating like this for the last 2 weeks and it has enabled me to lose 5 kilos. I have not accelerated my exercise plan or taken any vitamins or diet food. I have just been aware of what I eat on most days and then eat whatever I want one day a week.

I never imagined|thought|believed I could lose 5 kilos while eating mexican meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. Carne Seca (Dried Beef)

4 cups Carne de Res Deshebrada
Juice of 1 Mexican lime
2 tablespoons garlic pur?e
1/4 cup olive or vegetable oil
1/3 cup onion, minced
1/2 cup green chile, peeled, seeded and chopped
1 tomato, chopped
1/2 teaspoon salt, or to taste
1/2 teaspoon pepper, or to taste
2 tablespoons garlic pur?e

Preheat oven to 325 degrees F. To "dry" the meat, toss it with the lime juice and 2 tablespoons garlic pur?e, place it on a cookie sheet, and bake it for 15 minutes, stirring occasionally. The meat should be quite dry and beginning to stiffen. If not, continue cooking a few more minutes. The meat can be prepared to this point and then refrigerated, if desired.

To prepare the filling, heat a large skillet over moderate heat. Add the oil, then the onion, and saut? it until it is just soft but not browned, 2 to 3 minutes. Add remaining ingredients and cook, stirring often, for 3 to 5 minutes.

Makes about 4 cups.
