You possibly will not believe you could lose weight while on a diet plan which includes carne guisada (beef stew) but it can happen. The key is to not eat carne guisada (beef stew) or other high calorie beef/pork/lamb/veal every day but in moderation.

For example, I allow myself moderately high calorie food once per week. I eat a calorie controlled diet for 6 days of the week, say 1200 to 2000 calories each day, and then 1 day, I eat whatever I want – within moderation of course.

I have been sticking to this diet for the last 2 weeks and it has enabled me to lose 5 kilos. I have not accelerated my exercise habits or taken any vitamins or diet food. I have just been aware of what I eat on most days and then eat whatever I like one day per week.

I also believe it helps to have some support when trying to lose weight and for that I signed up with the Biggest Loser club. They have lots of tools to help you monitor your progress and achieve your goals.

I never imagined|thought|believed I could lose 5 kilos while eating southwestern meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. Carne Guisada (Beef Stew)

This recipe can be used for Beef Stew Tacos.

1 (1 1/4 pound) chuck roast, cut into bite-size pieces
2 tablespoons all-purpose flour
1 tablespoon vegetable oil
1 green bell pepper, chopped
1 medium onion, chopped
1 or 2 fresh jalape?os, minced
1 1/2 cups beef stock
1 tablespoon tomato paste
2 teaspoons cumin seeds, toasted and ground
1/2 teaspoon chili powder

Heat oil over medium-high heat until it just begins to smoke. Add beef and stir constantly until it is well browned. Add bell pepper, onion, jalape?os, beef stock, tomato paste, cumin seeds and chili powder and bring the Guisada to a simmer on the stove. Cover the skillet and place it in the oven. Bake for about 2 1/2 hours, until the meat is falling-apart tender. During the cooking, check the meat every 10 minutes and add additional water or beef stock, if necessary.

When the dish has finished cooking, there should be enough liquid to come about halfway up the meat, and it should be rather thick.

Make a roux with the all-purpose flour and vegetable oil. Add the roux in 1 teaspoon increments, to give the sauce a final thickening and bind the ingredients together. Remove the bay leaf and serve with rice and refried beans.

Variation
Peel 2 potatoes, cut them into bite-size dices, and boil them until they are just soft. Stir the potatoes into the Carne Guisada, bring to a boil, and simmer for 5 minutes. Wrap in soft, warm flour tortillas.
