You might not believe you could lose weight while on a eating plan which includes calabacitas but it is possible. It is fundamental to not eat calabacitas or other high calorie vegetable every day but in moderation.

As an example, I allow myself rich food one meal per week. I eat a reduced calorie diet for 6 days of the week, say 1200 to 2000 calories per day, and then on the last day, I eat anything - without going crazy of course.

I have been sticking to this diet for the last 2 weeks and it has aided me to lose 5 kilos. I have not changed my exercise plan or taken any supplements or diet drinks. I have only been aware of what I eat on most days and then eat whatever I feel like one day of the week.

I also think it is helpful if you have professional support when on a weight loss program and for that I registered with the Biggest Loser club. They have many tools to enable you to monitor your progress and reach your goals.

On my one day off|non diet day|free day per week, I like|prefer|tend|usually like to eat southwestern food. I never imagined|thought|believed I could lose 5 kilos while eating southwestern meals but am very pleased|happy|glad|elated to see it is possible|does work|can work|can happen. Calabacitas

3 small zucchini or other summer
    squash, unpeeled, diced large
2 large tomatoes, chopped
2 fresh yellow hot peppers, chopped
1 medium onion, diced
1 clove garlic, chopped (optional)
1 can whole kernel corn, drained
1/2 to 1/3 pound Monterey jack cheese,
    cut into chunks
1 teaspoon freshly squeezed lime juice (optional)
1 tablespoon finely minced fresh cilantro (optional)
Salt and freshly-ground black pepper

Put squash, tomatoes, peppers, onion and garlic into a saucepan, adding no water or oil. Heat slowly until all ingredients are hot and onion is translucent. Add corn and cheese. Put lid on pan and continue to heat until cheese is melted. At this point, you can add lime juice, cilantro, salt and freshly ground pepper to taste, if desired. Serve hot.
