brown sugar pie

December 9th, 2009

You might not believe you could lose weight while on a eating plan which includes brown sugar pie but it is obtainable. The key is to not eat brown sugar pie or other high calorie desserts every day but in moderation.

For instance, I allow myself moderately high calorie food once per week. I eat a calorie controlled diet for 6 days of the week, say 1200 to 2000 calories each day, and then one day, I eat whatever I like – without going crazy of course.

I have been eating like this for the last 2 weeks and it has enabled me to lose 5 kilos. I have not accelerated my exercise plan or taken any supplements or diet drinks. I have just been aware of what I eat on most days and then eat whatever I like one day per week.

I also find it makes things easier if you have professional support when trying to lose weight and for that I registered with the Biggest Loser club. They have several tools to enable you to monitor your progress and attain your goals.

Brown Sugar Pie

1 unbaked 8-inch pie shell
1 cup brown sugar
3 tablespoons all-purpose flour
Speck of salt
1 (12 ounce) can evaporated milk
2 1/2 tablespoons butter
Ground cinnamon

Preheat oven to 350 degrees F.

In the pie shell, place the brown sugar, flour and salt. Mix with your fingers. Pour the evaporated milk over the flour and sugar, but do not stir or mix in. Dot with butter, and sprinkle cinnamon liberally over all. Bake for 50 minutes, or until the filling just bubbles up in the middle. The filling will never completely set, but that’s the way it’s supposed to be.

This pie is better eaten at room temperature. If you refrigerate leftovers, reheat them in the oven before serving.

NOTE: Recipe can be doubled and prepared in a 10-inch pie shell. For that size, bake 1 hour and 20 minutes.

Yield 12 servings.
