You might not think you can lose weight while on a diet which includes beef enchilada casserole but it is possible. It is pivotal to not eat beef enchilada casserole or other high calorie enchiladas every day but in moderation.
This is what I do, I allow myself moderately high calorie food once per week. I eat a reduced calorie diet for 6 days of the week, say 1400 to 1800 calories per day, and then one day, I eat anything – without going overboard of course.
I have been using this method for the last 6 weeks and it has aided me to lose 5 kilos. I have not accelerated my exercise regime or taken any supplements or diet drinks. I have only been careful of what I eat most days of the week and then eat whatever I feel like one day of the week.
On my one free day per week, I tend to eat southwestern food. I never thought I could lose 5 kilos while eating southwestern meals but am very elated to see it can work. If you feel like trying some southwestern food, I suggest you make beef enchilada casserole which is one of my best loved southwestern recipes.

1 pound ground beef
1 can each cream of mushroom soup,
tomato soup, cream of chicken soup
1 small can diced green chiles
1 small can (15 ounce) hot enchilada sauce
1 pound longhorn cheese, grated
1 dozen corn tortillas
Cook ground beef in large skillet until meat is done. Then add each can of soup, chiles, and hot sauce. Heat mixture to boil and allow to simmer for 5 minutes.
Take mixture off heat. Put four corn tortillas in bottom of 9 x 13-inch baking dish. Add one-third of the meat mixture and one-third grated cheese. Continue making layers of tortillas, meat mixture and cheese until all ingredients are used. Bake in 350 degree F oven for 20 minutes.
You can adapt the recipe to make it a little bit healthier or with less calories as this can aid you to lose 5 kilos easily. It was successful for me and could aid you to lose weight also.
